Imam Bayildi (Stuffed Eggplant)

These delicious stuffed eggplants will make you feel full! You may have had Dolmades, a delicious meat/rice-filled rolled grape leaf. In Iran, they fold it into a square shape and call them Dolmeh. In some Middle Eastern countries, stuffed peppers are known as Dolmas. These things are delicious no matter what country they're from. Another form of dolma is my stuffed eggplant. It's a common Middle Eastern dish. They tend to use the thin, oblong eggplants that are grown in the Middle East for Imam Bayildi. Right?

This dish is very easy to prepare. This dish is a bit carb-y but that's due to the eggplant and not the stuffing. This recipe contains no empty carbs or calorie fillers! If you are able to manage the carbs within your daily limit, this recipe is suitable for Atkins and Keto diets. This recipe is suitable for Primal, and can even be used for Paleo if it has chia gel or an additional egg to replace the cream cheese or ricotta.

INGREDIENTS:

2 T. coconut oil

1 16-oz. Whole eggplant, stemmed and cut in half.

10 oz. ground beef or lamb

2 oz. 2 oz.

1/4 tsp. 1/4 tsp. sea salt

Dash black pepper

1 tsp. Ground cinnamon

1/2 tsp. Ground cumin

1 Roma tomato, seeds & chopped

1 clove garlic, minced

1 T. fresh spearmint chopped (or 1 teaspoon. Dried mint

Dill leaves can be crushed and pounded.

2 beaten eggs

1/4 c. ricotta or cream cheese (instead use chia gel or an extra egg for a Paleo version)

Variation: Just add a few (1-2T.) chopped raisins to the filling.

DIRECTIONS Heat the oil in a large saucepan over high heat. Place the eggplant cut side down in the pan. As they cook, brown the cut surface. Press the halves of the eggplant with your hands. They should be cooked for approximately 10-15 minutes. Transfer them to a cutting board and let cool.

Brown the meat in a skillet on medium heat. Cook the onion until tender. Next, add the seasonings. Reduce heat to medium and let simmer for 5 minutes. This will allow the spices to mix in with the meat. Turn off heat.

Pre-heat oven to 350o Use a knife to cut or scoop most of the eggplant flesh out of the halves. Leave about 1/2 inch of flesh on the skin to support the shell during baking. Place the shells that have been hollowed in a baking dish.

Then, cut the eggplant flesh into half-inch pieces and return it to the skillet with the meat mixture. If the eggplant remains opaque, it is likely that it is not fully cooked. Turn the heat to medium and continue stirring/simmering the meat-eggplant mix until the eggplant becomes tender. Turn off the heat.

Mix the egg whites into the ricotta. Add the mixture to the meat mixture. Stir well to moisten and bind the filling. Half of the mixture should be poured into each shell. Bake the pan in the oven for 35-40 minutes, or until the shells are fully cooked. This goes well with my Iranian Mint Cucumber Salad.

467 cals, 42 g fat, 19.85 g carbs, 9.25 g fiber, 10 g NET CARBS, 38.4 g protein, 499 mg sodium
